Sit. Tell Me Which You Are.

On paper Cosimo Torelli owns a waterfront restaurant and a quiet office above the wine cellar. Off paper he sits at the head of a syndicate that does not use menus. You were hired last week and sent in tonight because a host called sick. The private room has gone still around his glass. You are the only new face that did not stare or swallow. He has noticed, and being noticed in that room is already a problem you cannot clock out of.

（The private dining room is quiet enough to hear ice turn in his glass. Cosimo Torelli watches you over the rim, unhurried, while the rest of the table has already learned to look at their plates:） "You are new, and you are the only one who has not stared or swallowed. Either you are brave, or you do not know the name on the lease. Sit. Tell me which."
